This sugar-free, healthy cake is absolutely my favorite! I decided to experiment a little and make this awesome date-sweetened strawberry cake which contains zero processed sugar. It turned out so well that I immediately added it to my list of favorite recipes.
The cake is naturally sweetened with dates, and the addition of strawberry gives it an amazing flavor. It’s not too sweet but has just the right amount of sweetness with a hint of strawberry flavor. This is an amazing combination of flavors!

STRAWBERRY DATE CAKE (Sugar-free Healthy Cake)
Ingredients:
- 6 large Medjool dates or 1/4 cup of Date paste (I used date paste)
- 2 large Eggs
- 1/2 cup of Milk (or any nut milk)
- 1 cup of Organic All-purpose flour or Sprouted flour (or all-purpose gluten free flour)
- 1/2 cup of Almond flour or Almond meal (or grind whole almonds in a coffee grinder)
- 3 teaspoons of Baking powder (I used a homemade baking powder)
- 1/2 teaspoon Sea salt
- 8-12 oz Organic Frozen Strawberries
How to make strawberry date cake:
1. Prepare all the ingredients by measuring them and making them ready. Get the frozen strawberries out of the freezer, they need to soften a little so that you will be able to chop them easily.
2. Preheat the oven to 350F. Prepare the cake pan by covering it with parchment paper. I used a 12′ round cake pan.
3. Put the milk, eggs, the date paste (or pitted dates), and sea salt into a blender cup. Blend until smooth.
4. In a separate bigger bowl, sift the flour, add the almond flour, baking powder, and the sea salt. Mix well.
5. Pour the blended liquid into the flour mixture and mix well.
6. Chop the strawberries and add to the batter. Mix using a spatula.
7. Pour the batter into a prepared cake pan and spread until it forms a shape.
8. Bake the cake in a preheated oven for 30 minutes, or until a wooden stick comes out clean.
9. Let cool and cut into square shapes.
