This sugar-free healthy cake is absolutely my favorite from now on! Today I decided to experiment a little and made this awesome date-sweetened strawberry date cake which contains zero processed sugar. It came out so good, that I can’t wait to write the recipe down before I forget the proportions!
The cake is naturally sweetened by dates, and the strawberry gives an amazing flavor to it. Not too sweet, not less sweet, just the right amount of sweetness with the hint of strawberry flavor. Amazing combo!
STRAWBERRY DATE CAKE (Sugar-free Healthy Cake)
Ingredients:
- 6 large Medjool dates or 1/4 cup of Date paste (I used date paste)
- 2 large Eggs
- 1/2 cup of Milk (or any nut milk)
- 1 cup of Organic All-purpose flour or Sprouted flour
- 1/2 cup of Almond flour or Almond meal (or grind whole almonds in a coffee grinder)
- 3 teaspoon of Baking powder (I used a homemade baking powder)
- 1/2 teaspoon Sea salt
- 8-12 oz Organic Frozen Strawberries
Instructions:
1. Prepare all the ingredients by measuring them and making ready. Get the frozen strawberries out of the freezer, they need to soften a little so that you will be able to chop them easily.
2. Preheat the oven to 350F. Prepare the cake pan by covering it with a parchment paper. I used 12” round cake pan.
3. Put the milk, eggs, the date paste (or pitted dates), and sea salt into a blender cup. Blend until smooth.
4. In a separate bigger bowl, sift the flour, add the almond flour, baking powder, and the sea salt. Mix well.
5. Pour the blended liquid into the flour mixture and mix well.
6. Chop the strawberries and add to the batter. Mix using a spatula.
7. Pour the batter into a prepared cake pan and spread until it forms a shape.
8. Bake the cake in a preheated oven for 30 minutes, or until a wooden stick comes out clean.
9. Let cool and cut into square shapes.
