Yogurt Dough Cinnamon Rolls (No Yeast, No Eggs)
Ingredients:
- Organic All-purpose Flour or Sprouted Flour – 1 1/4 cup
- Organic Plain Yogurt – 1 cup
- Vanilla extract – 2 teaspoons
- Sea salt – 1/8 teaspoon
- Baking powder – 1 1/2 teaspoon (I used Homemade baking powder)
Filling:
- Grass-fed Butter – 2 Tablespoon
- Cinnamon powder – 1 Tablespoon
- Coconut sugar – 3 Tablespoons
Glaze:
- Coconut sugar, powdered in a blender – 3 Tablespoons
- Milk – 1 Tablespoon
- Pecans or Walnuts, chopped – 2 Tablespoons
How to make yogurt-dough cinnamon rolls:
1. Preheat the oven to 350 F. Prepare the baking sheet by covering it with unbleached parchment paper.
2. Sift the flour into a large bowl. Add baking powder and salt. Mix.
3. Add yogurt and vanilla extract to the flour. Form a soft dough. The dough may stick to hands, which is okay. Just sprinkle some flour on the top and form a ball. Do not add more flour to the dough itself, just sprinkle enough to be able to form a ball. The dough needs to be super soft.
4. Roll the dough into a rectangle. Sprinkle some more flour to make it easier to roll. The rectangle thickness should be around 1/4” (1 cm).
5. Melt the butter and spread on the rolled dough surface. Leave one side untouched as in the photo. We will use that side to seal the roll.
6. Mix coconut sugar with cinnamon. Sprinkle the sugar-cinnamon mixture on the buttered surface.
7. Roll the dough and seal the edge wetting the side.
8. Cut the roll into 1/2 inch (about 2 cm) thick parts. Using a string instead of a knife makes cutting much easier.
9. Bake the rolls in a preheated oven for 15 minutes. If your rolls are super big, they may need more time to bake. If they are just like in the picture, then 15 minutes are perfect. Let cool.
10. Prepare the glaze by mixing the powdered coconut sugar and milk. Spread over cooled cinnamon rolls. Ready!
