This cottage cheese pie is extremely easy to make and takes only a little time to prepare. If you want an easy and fast pie recipe, this is it.

You can make this pie with a variety of flour types. I have tried it with a gluten-free flour mix, sprouted Spelt flour, sprouted oat flour, and organic all-purpose flour. All turned out fine, with little difference in taste, depending on the flour type.

Ingredients:

The crust:

The filling:

  • Cottage cheese – 500 gr
  • Sour cream – 3/4 cup
  • Eggs – 3
  • Coconut Sugar – 1/2 cup
  • Vanilla extract – 1tsp

How to make a cottage cheese pie:

1. Preheat the oven to 350 F.

2. Add the baking powder to the flour. Mix.

3. Shred the butter into the flour. To make the shredding easier you can dip the butter in the flour and shred, or add the butter and flour into the food processor and blend until you have a buttery crumbly mixture. Set aside.

4. In another bowl, mix the cottage cheese, eggs, coconut sugar, sour cream, and vanilla extract. Mix until well incorporated. Use 2 eggs, ad one more if your cottage cheese is drier than usual.

5. Spread the buttery flour on a baking pan which is covered with a parchment paper. Set 1 cup of the buttery flour aside.

6. Pour the cottage cheese mixture on the flour layer and carefully smooth out using a spatula.

7. Sprinkle the rest of the flour on the top. You can sprinkle with some coconut sugar too, but that’s optional.

8. Bake in a preheated oven for 20-25 minutes.
